We have developed several varieties: Gianna, a mild washed rind cheese reminiscent of Taleggio with a bite suggestive of Teleme; Dry Jack, rich in flavor and aged for a harder texture; Old World Portuguese, a salt and virgin olive oil rub brine cheese.
