It's a Portuguese type cheese that was aged 9 to 12 months and made after the
"Saint George" recipe.
It has a creamy nutty, buttery flavor and semi-hard texture. Slice it thinly for
sandwiches, shave it on
your salad, or grate it on your pastas.
It melts wonderfully and browns beautifully in the oven.
Excellent with some Chardonnay.
